The series VZ
wood-burning ovens
are ideally suitable for pizzeria
which produce pizzas in the original traditional style with wood
burning fires. Through its special construction it is possible
to reach temperatures of up to 350 °C. Baking times range
from 3 to 4 minutes. The external housing consists of a high
strength pressing with a high percentage of aluminium oxide.
This ensures high material stability and extreme fire resistance.
Due to the parabolic form of the oven interior and its height,
it is possible to ensure an equal and constant heating of the
oven floor. This enables a continuous feeding of pizzas. The
wood ovens in the VZ series have a reduced consumption of
wood of up to 50 % when compared to other wood ovens
of the same capacity. The ovens come with (depending on
size) 3-4 base plates, 4-6 roofing segments, 1 steel door, and
1 thermometer. The ovens must be built onto an insulating
mortar layer of 8-10 cm thickness. The rock wool insulation
(100 mm density) must have a thickness 12 cm and must be
secured with iron reinforcing, which then becomes the grid for
the 40 mm thick mortar outer skin.
